Coconut sugar, or palm sugar, contains inulin, a water-soluble dietary fiber that acts as a prebiotic and slows the absorption of glucose into the bloodstream. Unlike “empty” refined sugar, palm sugar retains essential minerals such as iron, zinc, and potassium, which are important for metabolism and blood circulation. Additionally, its phytonutrient content, including polyphenols and flavonoids, gives it a dark brown color and provides antioxidant activity that combats free radicals in the body. This sugar also contains small amounts of amino acids that contribute to protein synthesis, adding natural nutritional value to this traditional sweetener.

Javanese palm sugar has a low glycemic index (Low GI), ranging from 35–54, which is significantly lower than refined sugar (60–100), providing a steady and gradual release of energy without causing drastic insulin spikes. In traditional pharmacy, palm sugar functions as a flavor balancer (corrigens saporis), offsetting the bitter taste of rhizomes such as temulawak or kencur, making herbal tonics easier on the stomach. Its inulin content also supports digestive health by nourishing beneficial gut bacteria, particularly Bifidobacteria, and aiding smooth digestion. Traditionally, palm sugar is also believed to help purify the blood and gently yet effectively boost overall stamina.
